Good evening!  On tonight's menu was Jamaican Jerk Pork Chops and baked asparagus.  Are you drooling yet? ;-)

Before we get to pics and the list of ingredients and directions, I just have to say, these were really good! The best part was that they were easy!  Tasty and easy puts it at the top of my list for making again! Simplicity!!

Ingredients:

  1. 4 boneless pork loin chops, cut 3/4 inch thick
  2. 3 tablespoons orange juice or grapefruit juice (I used OJ!)
  3. 2 teaspoons Jamaican Jerk or steak seasoning (I used the JJ!)
  4. 1 tablespoon cooking oil
  5. 2 tablespoons dijon-style mustard (I used Emeril's Dijon)
  6. 1/3 cup orange marmalade (I used Kroger brand, found in jelly section)

I spy some wine? :-)

Directions:

  1. Brush both sides of pork chops with 1 tablespoon of the orange juice. Sprinkle both sides with seasoning (jerk or steak seasoning). In a 10-inch skillet cook chops in hot oil over medium heat for 8-12 minutes or until internal temperature of chops registers 160 degrees F on an instant-read thermometer, turning once halfway through cooking. Remove skillet from heat. Transfer chops to another platter.

Optional steps include turning on some gnarly tunes and having a super-awesome apron on!

 Back to real directions:

  2.  For sauce, stir mustard into skillet drippings. <--- so wrong, yet so right. Whish in marmalade and remaining 2 tablespoons orange juice. Return to heat. Cook and stir until just boiling. 




  3.  Pour sauce over chops.

As a side, I roasted some asparagus. Just some olive oil drizzled over the top with salt and pepper.

Today was day numero uno of my 5k training for my race on March 20th!  Wait, I didn't tell you about that?

My bad.

I decided to sign up for a 5k (3.1 mile) race on March 20th with a few friends and I believe my daddy (yes, I still call him daddy!) is going to run, too!

Day one looked like this:
Actually, let's start off the night before...Sunday night...didn't sleep a wink! Alarm blares at 5:15am for me to get up and go run.  No thanks... think I'll continue to TRY and sleep.  I will run after work. Go to work, stand up all freakin' day doing "busy" work, my feet are hugely (and grossly) swollen, I get off at 5, drive home and STILL have to run.  Yah, it was a goooood day.

See my stats below. Not too shabby! And, I didn't freeze my heiney off! +!!

The run was run 2 minutes, walk 1 x 10! Total of 30 minutes of glorious exercise!



If you can't read it... it says 30:00 minutes = 2.55 miles.


PLUS! I got paid to run last night! Are you lost yet?  Look what I found on the sidewalk!!! NO JOKE!



I found the $50 all crumpled up and soaking wet and about 1 minute before my run was to be finished I saw 12 cents! I made $50.12 last night!

No worries, people. This went straight into our "One Year Anniversary Vacation" fund!
